Who should attend?

Our Brewing Masterclasses are for Brewers with experience of brewing regularly and at a professional level. The Masterclasses are an opportunity for an experienced brewer to focus on improving their knowledge on a specific aspect of the brewing process.

How will you benefit?

During the Masterclasses we focus and examine the options related to one specific aspect of brewing. At the end of the Masterclass, you will have gained a deeper understanding of both the technical as well as the chemical properties active in this cycle of brewing. You will then have the knowledge for experimenting further with the tools to produce a commercially viable and stable product. 

Hops in Brewing

course duration: one day

At the end of the workshop you will be able to:

  • explain the uses for hops in brewing – traditionally for reducing the risk of microbiological contamination
  • discuss the methods currently in use for using hops to add flavour and complexity in beer
  • identify the major hop varieties in use for brewing and what flavours or structure they bring to the beer
  • explain the anatomy of a hop flower and what each part of the flower contains and therefore ‘brings’ to the beer.

yeast

Yeast in Brewing

course duration: two days

At the end of the workshop you will be able to:

  • recognise yeast cells under the microscope, be able to ascertain whether the yeast sample is healthy
  • perform a yeast count
  • work and respect the hygiene regulations for laboratory testing
  • recognise and understand how to use the equipment utilised in yeast sampling and microbiology is to be used
  • prepare a nutrient base in a petri dish or test tube
  • inoculate a sample for screening
  • review the success of the inoculation
  • prepare a suitable yeast sample for pitching
  • prepare a viable yeast sample for longer-term storage

Due to the nature of the content material of this workshop the number of participants will, by definition be smaller than some of our other courses and workshops.

malt

Malt in Brewing

course duration: one day

At the end of this workshop you will be able to:

  • explain how the transformation of barley to malt occurs on the microbiological level
  • explain the effect of roasting the barley will have on the flavour and colour of the beer
  • be able to check the level of transformation of starch into sugar in the mash
  • discuss the uses of spent grain and methods of reducing the overall cost of the grain bill on the production of the beer
  • know the effect of using alternate cereals such as rye, wheat, sorghum among others in brewing and how to ensure that the enzymes available for altering the starch into sugar are available at the required levels
  • difference in barley types and their use in brewing – 2 row and 6 row barley

Brewing & dark beers

course duration: one day

We will be looking at the traditional approach to the production of Stout & Porter, as well as the modern approach to these beer styles.

Choice of yeast strain, hops and general production of the beer style will also be covered during the Masterclass.
